Pork tenderloin is a lean, tender cut of pork which goes well with a wide variety of other ingredients. In this recipe it is served with sprouting broccoli, goats’ cheese, lemon and chilli flakes for a bit of heat.

Ingredients:
For the soy and honey pork:
- 200g/7oz pork tenderloin, sliced
- 1 tbsp olive oil
- ½ onion, finely sliced
- 2 cloves garlic, finely chopped
- 2 tbsp soy sauce
- 1 tbsp honey
- 1 lime, zest and juice
For the broccoli with chilli, lemon and goats’ cheese:
- Large handful purple sprouting broccoli, cut into florets
- 55g/2oz hard goats’ cheese, grated
- ½ lemon, zest only
- ½ tsp dried chilli flakes
- Salt and freshly ground black pepper
Preparation:
- For the soy and honey pork, heat the olive oil in a frying pan and cook the onion for 2-3 minutes, or until softened. Add the garlic and fry for one minute, then add pork and stir-fry until golden brown all over.
- Drizzle over the soy sauce, honey, lime zest and juice plus a splash of boiling water and cook for 1-2 minutes or until the pork is cooked through. Set aside.
- For the broccoli, place the broccoli into a pan of boiling salted water and cook for 3-4 minutes or until tender. Drain well and stir into the pan with the pork, then add the grated goats’ cheese, lemon zest and chilli flakes.
- Seasonto taste with salt and freshly ground black pepper.
- Pile the stir-fried pork and broccoli on to a serving plate and serve.
