Fish fingers

Always a family favourite, why not try making your own fish fingers. You can use haddock, salmon or cod fillets and Hillfarm rapeseed oil for frying. Delicious!

Serves 8


 

Ingredients:

  • 500g Sustainably sourced haddock, salmon or cod fillets
  • 2 eggs
  • 150ml sparkling mineral water, chilled
  • 115g plain flour
  • 55g cornflour
  • Hillfarm Rapeseed Oil, for deep-frying

 

Preparation:

  • Place the eggs in a bowl with mineral water and whisk gently to combine.
  • Add the flours and use chopsticks to mix until just combined – the batter should be quite lumpy.
  • Half-fill a deep-fryer or large heavy-based saucepan with Hillfarm Rapeseed Oil and heat to 190°C. (If you don’t have a deep-fryer thermometer, test a cube of bread – it will turn golden in 30 seconds when oil is hot enough.)
  • Slice the fish into similar sized strips
  • Dip the fish into the batter and fry in batches for 2-3 minutes until crisp and golden. Make sure you allow the oil to come back up to temperature before adding the next batch.
  • Transfer onto a plate covered in kitchen paper to drain.
  • Serve immediately
