At Hill Farm, they’ve decided this season that the only way to cook asparagus is to roast it, not to boil or steam! Try it – they really do think it will change the way you cook this delicious, nutritious seasonal vegetable forever. Here’s how to do it:

Ingredients:
- 1kg potatoes
- 4 tbsp Hillfarm Rapeseed Oil
- 200g English Asparagus
- Sea salt & freshly ground pepper
Directions:
- Preheat the oven to 200c
- Par boil potatoes.
- Drain and shake potatoes in the pan so that the edges of potatoes are ‘scuffed’
- Heat the oil in a the preheated oven and when it’s really hot, add the potatoes and toss them covering each well. Season with salt and pepper and cook for 40 minutes.
