Pork cheeks need slow cooking, you can’t rush them, but they are very tasty. They are becoming trendy again, your local butcher should be able to get them for you

Cooking time: 120 minutes
Serves: 4
Ingredients:
- 8x Pork cheeks
- 120ml Elderflower wine
- 40ml Elderflower cordial
- 100g diced carrot
- 100g chopped Leek
- 100g chopped celery
- 200ml Brown stock
Preparation:
- Pre heat oven to 140°C
- Fry the carrot, leek and celery until soft, then place in a pan with pork cheeks, elderflower wine, cordial and stock.
- Bring to the boil and place, covered, into preheated oven for two hours or unitl tender.
- Once cooked remove the cheek from pan, strain the sauce and reduce to a thick sauce consistency.
Serving Suggestion:Serve with roasted root vegetables and horseradish mash.
